I had the pleasure of meeting the Regional Sales Representative for Signorello Wines yesterday and tasted Trim, owner, Ray Signorello’s latest project.
This wine, unlike the majority of his wines is not an estate wine, is it made from grapes sourced from some of the best vineyards all over California.
It is comprised of Cabernet Sauvignon, Merlot, Malbec, Cabernet Franc and Petite Verdot, made in a classic Bordeaux style. Unlike Bordeaux blends, this wine does not touch oak, it is fermented, and fined entirely in stainless steel, yet maintains ample tannins and structure.
On the nose, there is an intense aroma of blackberry, tobacco, cedar and violet. It is clear, deep plum in color, with flavors of brambly black fruit, tobacco, cedar and rich plum.
This is intended to be a week night wine, approachable, affordable, with great packaging, and a nice wine to take to a friend’s for dinner. This goes well with grilled meat, burgers, fajitas, and chocolate.
